Hello, friends! I hope each of you had a fabulous weekend. I certainly did. This was actually the first weekend that really felt like summer. On Saturday and Sunday I was able to spend some time with my family at my dad’s pool. It’s hard to believe tomorrow is already July 1 and that this weekend was the first day we dipped our toes in the water this season.
Anyway, this week I’m wrapping up IBC’s unofficial rhubarb series with a cocktail today and one more sweet treat (hopefully) tomorrow. Once I post these two recipes, it’s back to projects around the house. As I mentioned awhile ago, my bedroom needs a fresh coat of paint and a new look, so I’m hoping to get started on that this week. I’m also in major purge mood. Over the last couple years, with closing my B&B and purchasing props for blogging, my house has becoming overrun with “stuff.” I’m hoping to take some time to clear the clutter as well. Not that you want to see that, but hopefully it will allow me to make progress on other areas of my home.
So that’s that.
As promised I would share a few drink recipes using the strawberry rhubarb syrup I made last week. First up, as the title of this post suggests, I’m going to show you how to make a Strawberry Rhubarb Margarita.
Then, at the end of this post, I’ll also tell you how to make a quick Strawberry Rhubarb Mimosa. Sound good? (Also, and completely unrelated, I’ll be linking up a Blue Margarita I made for BHG, too! So if you are looking for that, keep scrolling.)
Let me show you how to make it.
Strawberry Rhubarb Margarita
Here’s what you will need:
1 cup strawberry rhubarb syrup (recipe here)
2 cups white tequila
1/2 cup fresh lime juice
1/4 cup triple sec (I like Cointreau.)
1/4 cup orange juice
8 strawberries, diced
1 lime wedge and sugar for rimming the glass (optional)
Begin by running a lime wedge around the rims of four margarita glasses. Then roll the rims in sugar. Place an equal amount of the diced strawberry pieces in each of the four glasses; then fill with ice.
In a large pitcher, combine the strawberry rhubarb syrup, tequila, lime juice, triple sec, and orange juice by shaking or stirring.
Pour the mixture over the ice into the glasses. Sip and enjoy!
That’s it, friends. Fruity margaritas with a twist. Totally delish!
That drink is pretty simple. However, if you’re looking for something even easier, try this Strawberry Rhubarb Mimosa.
Just put 1-2 tablespoons of the Strawberry Rhubarb Syrup in a champagne glass and top it with your favorite champagne, sparkling wine, or Prosecco!
I usually like my champagne drinks garnish free, but this would look totally adorable with a strawberry on the side of the glass.
Easy, delicious, and totally classy.
